Proud of its many local specialities, Le Glajou was an obvious choice for the CUISINE MONTOISE logo thanks to these traditional recipes from the marshes:
- Frogs’ legs with garlic butter
- Eel grilled over vine shoots and eel fried in garlic butter
Chef Alexandre Caetano has added pork cheek and chorizo to the recipe for calamari stew that he was given by Jeanine and Simone, two local women, in 2014. This recipe got the FANTAISIE GOURMANDE logo.
