For a completely authentic evening try the ‘Caves de Marson’ near Saumur. This troglodyte restaurant is set in a labyrinth of caves, which are surprising cosy and warmed by the bread oven that churns out masses of ‘fouettes’ (a bit like pita bread). They emerge from the oven puffed up and piping hot and are accompanied by your choice of local rillette.
